CHUTNEY'S AND THUVAYAL'S

tomato chutney

2 large tomatoes
2-3 pods garlic
1/4 tsp jeera
2-3 green chillies

Method
Heat oil. add jeera, garlic, chillies and tomatoes and fry till skin shrinks in tomatoes. Blend in a mixie with salt.

Coconut chutney

1/2 cup grated coconut
2-3 green chillies (or red chillies)
1 tsp Pottu kadalai
tiny piece ginger
grind the above ingredients and season with Mustard, hing, curry leaves.

COCONUT CHUTNEY-2
1/2 cup coconut
1 tomato
1 med. onion
2-4 green chillies
1 pod garlic(just one)
fresh coriander
Heat oil. Add the chopped onions, tomato, green chilli, garlic and fry till onions turn pale brown. Grind with coconut and add salt. Add fresh coriander in the final swirl of blending so that the leaves don't turn too pasty.
Season with mustard, curry leaves


Onion chutney

1 large onion cut into four.
marble sized tamarind
3-4 red chillies
salt to taste

Heat oil. throw in the chillies, onions and roast well.
Grind with tamarind and salt.
Season with mustard, curry leaves.

Mango chutney

Grated coconut - 1 cup
Raw mango - 4 piece without the skin
Green chillies - 3
Ginger - ¼ cm cube
Small onion -1 teaspoon cut fine
Curry leaves A few
Salt - ½ teaspoon

Preparation

Grind all the ingredients together until all the ingredients are just coarsely ground. Do not grind it to a fine paste. Roll out to a small ball and is eaten with hot rice, idli, dosa etc.

Pudina Thuvayal

1 cup pudina leaves
1tblsp fresh grated coconut
i med size tomato
marble size tamarind
2 tsp urad dal
2 red chillies
1/2 tsp channa dal

roast dals/chillies/tomato (till it turns soft) and toss in pudina last minute in this order. grind coarse with coconut/salt/small marble size jaggery

coconut thuvayal

1/2cup coconut
2 red chillis
1 1/2 tsp urad dal
hing
gooseberry size tamarind

fry all above and grind coarse.

paruppu thuvayal

toor dal-1/2 cup
1 red chilli
1/4 tsp pepper
hing

roast above and grind with 1 tbsp fresh coconut.

brinjal thuvayal

roast 1 brinjal and peel skin
2 red chillis
1 1/2 tsp urad dal
hing
gooseberry size tamarind or mix of tamarind and tomato.

Grind above ingredients coarse and add coriander in last turn.

Toor Dal chutney

1/4 cup thoor dal
2 green or 2-3 red chillies
hing
small lump tamarind

Roast everything except tamarind and grind with 2 tsp coconut/salt to taste.
